What is Sauerkraut anyways?

Sauerkraut is salted and shredded cabbage that goes through a fermentation process. This process is done in a relatively high-temperature environment for about 3 to 4 weeks. During this time, a lactic acid bacteria develops and turns the cabbage into sauerkraut.

This natural bacteria produces more acid and flavor into the sauerkraut, generating a distinct tanginess.
