Kimchi Tofu Scramble

• Classic Kimchi

• Non Dairy Milk of Choice (Oat, Coconut, Cashew, etc)

• Soy Sauce ( or substitute salt to taste )

• Asian Sesame Paste or Cashew Butter (to recreate creamy eggs)

• Nutritional Yeast

• Miso Paste

• Black Salt

• Firm Tofu

• Soft Tofu

• Scallons, chopped

Instructions

  1. Create your "egg" sauce by blending together non-dairy milk, soy sauce (or salt), Asian sesame paste (or cashew butter), nutritional yeast, miso past and black salt together until smooth.
  2. Pat drive firm tofu and crumble with hands. Then heat over medium high heat. Add in soft tofu and break it up into larger chunks.
  3. Pour the "egg" sauce into the tofu mixture and gently stir until combined.
  4. Reduce heat to medium and continue cooking for 3 additional minutes without mixing to let the tofu absorb the sauce.
  5. Add the scallons.
  6. Once the sauce it to the consistency of preference, turn off heat and still in Classic Kimchi.
  7. Serve and enjoy!
