Ingredients
For the sweet potatoes
- 1 large sweet potato, peeled and cubed
- 1 tbsp olive oil
- ½ tsp smoked paprika
- ½ tsp garlic powder
- ½ tsp kosher salt
For the beef
- 1 lb ground beef
- ½ tsp kosher salt
- ½ tsp black pepper
- ½ tsp garlic powder
For the bowl
- 4–5 cups chopped romaine
- 1–1½ cups Classic Dill Pickle Chips
- ½ cup cherry tomatoes, halved
- ¼ cup thinly sliced red onion
Optional add-ons
- Mustard or burger sauce
- Avocado
- Shredded cheddar
Instruction
- Preheat oven to 425°F. Toss sweet potatoes with olive oil, paprika, garlic powder, and salt. Spread on a sheet pan and roast for 20–25 minutes, flipping halfway, until tender and lightly caramelized.
- While the potatoes roast, heat a skillet over medium-high heat. Add ground beef and cook, breaking it up, until browned and cooked through, about 6–8 minutes. Season with salt, pepper, and garlic powder.
- Divide romaine between bowls. Arrange roasted sweet potatoes, seasoned beef, tomatoes, and red onion around the bowl. Top generously with dill pickle chips.
- Drizzle with mustard or burger sauce if desired and serve immediately.
