Ingredients

For the sweet potatoes

  • 1 large sweet potato, peeled and cubed
  • 1 tbsp olive oil
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp kosher salt

For the beef

  • 1 lb ground beef
  • ½ tsp kosher salt
  • ½ tsp black pepper
  • ½ tsp garlic powder

For the bowl

Optional add-ons

  • Mustard or burger sauce
  • Avocado
  • Shredded cheddar

Instruction

  1. Preheat oven to 425°F. Toss sweet potatoes with olive oil, paprika, garlic powder, and salt. Spread on a sheet pan and roast for 20–25 minutes, flipping halfway, until tender and lightly caramelized.
  2. While the potatoes roast, heat a skillet over medium-high heat. Add ground beef and cook, breaking it up, until browned and cooked through, about 6–8 minutes. Season with salt, pepper, and garlic powder.
  3. Divide romaine between bowls. Arrange roasted sweet potatoes, seasoned beef, tomatoes, and red onion around the bowl. Top generously with dill pickle chips.
  4. Drizzle with mustard or burger sauce if desired and serve immediately.
