Ingredients
For the Wraps
- 8 rice paper wrappers
- 1 lb cooked steak, thinly sliced or cubed
- 2 cups Cleveland Kitchen Classic Coleslaw
- 4 oz vermicelli rice noodles, cooked and cooled
- 1 head butter lettuce or romaine leaves
- 1 cucumber, julienned
- 4 green onions, thinly sliced
- 1 avocado, sliced
For the Peanut Sauce
- ½ cup peanut butter
- ¼–½ cup water
- 2 tbsp rice vinegar
- 2 tbsp soy sauce
- 1 tbsp honey or maple syrup (optional)
Instructions
- Cook vermicelli noodles according to package directions. Drain, rinse with cold water, and set aside.
- In a small bowl, whisk together peanut butter, water, rice vinegar, soy sauce, and honey (if using) until smooth. Add additional water as needed to reach desired consistency.
- Fill a shallow dish or pie plate with warm water. Dip one rice paper wrapper into the water for 2–3 seconds until just softened. Repeat with a second wrapper and slightly overlap them on a clean work surface for extra durability. Repeat with a third wrapper if desired for larger wraps.
- Place a lettuce leaf across the center of the wrappers.
- Layer with vermicelli noodles, steak, cucumber, green onion, avocado, and a generous scoop of Classic Coleslaw.
- Fold the bottom edge of the rice paper over the filling, then fold in the sides and roll tightly like a burrito.
- Repeat with remaining ingredients. Slice in half if desired and serve immediately with peanut sauce for dipping.
